Style: Barrel-Aged EisSour Wine Ale
Brewed on Feb 11, 2019, this Saison underwent fermentation with 50% Zinfandel Juice, then faced an Arctic chill at -30°C, freezing half its volume for 24 hours at the end of secondary fermentation. Subsequently, it matured for 3.5 years in 2nd use US white wine barrels, finally bottle-conditioned since summer 2023. It drinks akin to a dessert wine, featuring gentle carbonation. The journey to create this masterpiece spanned almost 4 years, but alas, HHOE isn't here to revel in it.
