Style: Blended Spontaneous Ale
For those who do not know what Spontaneous means, we highly recommend looking into the process of making Lambic beers as this project at SFBC was completely inspired by it. This years blend is a mix of 4 yr, 2yr and 1 yr barrel fermented spontaneous ale. No year 3 added to this mix as it sucked and was poured down the drain. Them's the breaks.
The aroma is earthy with barnyard brett hints. Fresh hay and vinous quality like pressed sauvignon blanc grape skins come through as it warms up. Lots of oak character that plays well with grape notes. The acidity is very soft and well balanced, the overall character is very akin to a natural wine. Best served at cellar temp.
