Gypsum lowers pH and adds permanent hardness (calcium ions) to soft brewing water. Homebrewers that use distilled, or RO, water like to add some gypsum back into the water to give it some hardness. Use 1 teaspoon per 5 gallons.
We at Short Finger Brewing Co. have been working hard to support and build the homebrew community in Waterloo Region. Please find out more about our homebrewing mission and interest in mixed-fermentation beers by reading our blog, and by following us on Twitter, Facebook and Instagram.
