Style: Double Plum BA Sour Saison
A collaboration with our friends at Escarpment Labs, who answered the call when we asked for help processing a silly amount of ON Blue Plums … we didn’t realize how silly the amount was until many hours into the pitting session. The result is a Saison that we performed punchdowns on for the first week at 350g/L. It was then laid to rest in barrels for 18 months before we moved it back onto more plums at 225g/L. That is a silly amount of blue plums.
